Comfort foods

The topic for the week is Comfort Foods.

When I think of comfort food, I think of baked macaroni and cheese. I like mac and cheese with fish sticks, mac and cheese with ham, heck... mac and cheese even goes with meatloaf (another comfort food).

I have tried all kinds of mac and cheese recipes over the years but the best one I found was on the box of Dreamfield pasta. You can find the recipe here.

What I like about this recipe is there are three different cheeses used. What a delight for a cheese lover like me!! And of course if some "extra" cheese falls into the dish, it's alright isn't it?

You'll notice there is nutmeg in the recipe. I have made it with and without nutmeg. My family likes it without. I've also added a sprinkling of finely crushed bread crumbs mixed with a little olive oil to the top of the mac and cheese (makes a little crust).

And the Dreamfields pasta, it tastes great! I was so happy to find a pasta that is low carb and has a good taste. I love Italian food and after living in Italy for 6 years, love it even more. I had pasta everyday!! It was very difficult to give up my pasta when we went on a low carb diet. And yes, I did try all the low carb pastas out there. Lets just say they taste "bad" BUT Dreamfields taste like pasta should and it doesn't raise your blood sugar.

This mac and cheese is soooo much better than the boxed orange mac and cheese (which I have been known to eat).

hmmm.... must be time for some mac and cheese!

Yummy! I used to make large dishes of mac and cheese using different cheeses, but it wasn't from a recipe. I just did it. I love mac and cheese, but don't eat a lot of it these days because I'm trying to cut calories some. My exhusband used to take my mac and cheese to his work when they had parties and bring it back scrapped clean. I guess they liked it too! Now I want to go make some instead of using those boxes dh buys! LOL

I love mac & cheese! But being lactose intolerant means my tummy doesn't!

Mmmm...that sounds yummy! Now I want to go make some. My toddler loves M&C. I'd fail at a low carb diet. I want my carbs!
